Food for Thought Friday -Week 4

With the Holidays coming up…here’s an easy, yet delicious, side dish recipe my Aunt Faye gave me:

Sweet Potato Casserole

2 Large Cans Cooked Sweet Potato, mashed
2 eggs
1 stick margarine, softened
2/4 cups sugar
1 tsp vanilla

Mix well and put in baking dish.

Topping
1 cup light brown sugar
1/3 cup all purpose flour
1/3 cup margarine, melted
1 cup chopped pecan

Mix well and spread on top of potato mixture.

Bake for 35 mins @ 350.
